you go in the early evening before the night guards get there... when there is only one staff member in each house....and simply leave them tied up in the soccer field....while they watch the place burn...
However, no buildings can be left standing...becuase you know these bastards they will try to house everyone in re-entry dorms or the luggage house if you leave these houses alone and don't set them on fire.
